we could use a special waypoint that is "whereever you are now" ("HERE") for flight planning.

I would think this is more helpful than the current system, which reads the current HERE but then fixes it to a specific map location. once I have taken off, I am already slightly off-course to my first waypoint.

this way, as a VFR pilot and user, I can be prepared for ATC in SoCal to shove me around and once they liberate me, I have a direct course from "HERE" to my first real waypoint.

It also helps with flying the VFR special routes through the LAX Class B airspace [these are VOR based]. yes, they may ask to intercept a VOR, even for a VFR pilot.

There may be other reasons to wish for a "snapshot my current position as a new waypoint", but iFly already addresses the specific scenario you described:  Whenever ATC's finished pushing you around, click "Direct To" your next waypoint and you'll have what you're asking for.

I use this method all the time when flying IFR.
