I noticed that one can run a finger along a flight path and get distances to/from both waypoints in NM; my Piper is calibrated in SM.  Is it possible to get these distances to display in SM?  I had already chosen SM under "Units".

Unless you're getting a different behavior on your iFly unit than I am on my tablet or phone, you're actually rubber-banding the flight plan leg to some degree and that's what's giving you the distances from each of the two waypoints.

Yes, it does it give in nautical miles, but I highly agree that if the default is set to statute miles then that's what should be shown.

Hook is right in his assupmtion here - that's 1000% what it sounds like you're doing.

Verify you're in the correct units by going to menu/setup/units of measure and changing length measurements how you see fit.

I can confirm that my setting for mileage is also in Statute Miles, and when I rubber band a flight leg it gives the measurements in Nautical Miles.  It really should use what the user has selected.
