Because those data are not broadcast via ADSB. To get those data, you need an active Internet connection, which is not at all guaranteed in flight. (Ignoring that the FCC says you shouldn't have your phone on in the air, cell coverage while airborne varies substantially depending on your phone, service provider, and location. I've got Verizon, and since I started flying in 2009 my coverage in the air has never been good, even at relatively low altitudes over populated areas. Outside of populated areas it's close to non-existent.)
Even if coverage were near-universal, I consider this feature of minor practical value at best. When I'm in the air it really doesn't matter to me if the target maneuvering at 1800' and 100 kts is a Cessna, RV, or Robinson. I don't care if the target at 4000' and 200 kts is a Cirrus or a King Air. I don't care if the target at FL240 at 400 kts is a Citation or a 737.
And if I'm on the ground with an internet connection and I'm curious about what's flying around me, then I'm going to open FlightAware to look it up, not iFly.
