I was surprised to see in the manual that MOA's are not included in the sectional map. I've only had the unit a couple of weeks and haven't noticed that while using the unit itself, but I'm curious. Why not?

The MOAs are not specifically highlighted on a sectional chart, but they are of course included in the sectional chart itself. There is a lot of data in a sectional, so overlaying additional information, such as we do with TFRs and Restricted/Prohibited areas, must be done with some reservation or the map will just be too cluttered to be useful.
