If I understood you guys correctly, the "cloud" purpose is to transfer the data from one device, say a tablet, to another device, say the PC.

So, with my current tablet, and the backup tablet, both of which have separate data and flight plans. if I upload them to your "cloud" will they be combined when downloaded to the PC or will the second upload simply overwrite the first? 

Then, when the "cloud" data is sent back to the tablet, will it combine with the current data, eliminating duplicates, and produce one grand dataset?  Or will it, again, delete what is already there completely before the download from the "cloud?"

Is there a simple way to backup that data and flight plans on a local device (even the same device) before we try this "cloud" thing, please?  Pretty please?

Correct, the purpose of the cloud is to share data from one device to another. 

If you are wanting to transfer data from one device to another you will need to launch the application on your android of other device and click:

Menu → About → My Account... → Sync Devices 

Then you may choose what device you would like to sync data from. By clicking on one of the devices you are able to select what data you would like to be synced to your device.

Regarding your main question here of combining the data vs. replacing, the answer varies based on data type.

For Flight Plans, Flight Trails, and Logs, it works as you desire now, combining them, such that you don't lose any flight plans, but it also *does* give you the *option* of deleting the excess ones upon completion of the transfer.

But for the Custom Waypoints and Instrument Layouts, however, these are overwritten, although this behavior may be changed in the future.
