How do I disable the automatic switch to Realview when viewing an airport diagram?

Greg,

Currently there is no way to disable the RealView when viewing an Airport Diagram. You can touch the "Plate Settings" button on the right and then set the Opacity to 100% and Revert Color to White. I think this will get you 95% where you are looking to be. It's on our Wishlist to separate the RealView and Airport Diagram modes a little more.

This is planned for Version 9.2, estimated release for later this summer.

Was there ever an update so that Realview and be turned off and we can just use the standard airport diagram.

If an airport has an Airport Diagram, you can bring it up so that it overlays the map (and thus overlays the Realview).  Tap the airport to bring up the Quickview menu, then View Plates, then the Airport Diagram.

I don't think there's an option to make the Airport Diagram automatically pop up on the map.  (The Realview is really treated as part of the map, though it only comes into view when zoomed close in.)

Actually there is.  Menu/Setup/map settings/ click on "auto-show Apt Diagrams".  If an airport has a diagram it will show up as you zoom in on it on top of the real view.
