I thought that the PING ADSB was discontinued months ago for some reason.

The uAvionix PingUSB will work with iFlyGPS. At this time that device only gives out 'Traffic' information. 

Unfortunately, the PingUSB puts out a WIFI signal for data passage and the iFly700 and 520 models are not capable of receiving. However, it should work with all other devices.

Could a Stratux be connected to a 700 via USB and get the ADS-B IN information?

Stratux is also WiFi only, so it won't work with the 700.  Since the Ping for iFly was discontinued, there really isn't a good ADSB option for the 700. Have you considered upgrading your unit?
